Introduction and some Cinnamon Walnut Zucchini Bread~

Hi readers!

I guess I should introduce myself a bit. My name is Victoria, but I also go by Vee if you're too lazy to type out my whole name, haha. My dream is to own a combine boba and bakery shop. I'm intensely passionate about food and discovering delicious places to eat at. Baking is my stress reliever, but I don't get to do it very often. Currently a college student majoring in Biochemistry (which may change soon...) I love my little puppy, Teddy, my family, and God.

Anyways, let's started on the bread! (Yum, yum).



MMMmmmm! Yes this recipe yields two loaves! I ended up giving about a loaf and a half away to friends and they all seemed to have enjoyed it so I hope you guys will too!

Cinnamon Walnut Zucchini Bread
Adapted from: Willowbird Baking

Ingredients:
3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
1 tablespoon cinnamon
3 eggs
1 cup canola oil
1 cup white sugar

1 cup brown sugar
1 tablespoon vanilla extract
2 cups grated zucchini (this was about 2 zucchini for me)
1 cup chopped walnuts (optional) 

Directions:

1. Begin prep by greasing and flouring two 8 x 4 bread pans and pre heating the oven to 325 F. In my case, I only had one pan available so I just did two batches in one pan. It is more time consuming but I really didn't want to go out and buy another pan for just one recipe. If it's too time consuming then try to find a friend willing to let you borrow their bread pan! Maybe bribing them with bread will help :)

2. Beat the eggs, oil, vanilla extract, and sugar together. Then mixed in the dry ingredients, the flour, salt, baking soda, and cinnamon! 

3. Mix in the zuchinni and walnuts! Now divide the batter amongst the pans and put it into the oven for 40-60 minutes. What worked for me was 50 minutes, but it'll depend on your oven and many other factors so check by using a toothpick to see if the middle is done. 

4. Let it cool before removing it from the pan then eat it!! Or don't, it's up to you. :)

The bread is super yummy and moist! Not overly sweet and there is no zucchini taste so don't worry. It's quite delicious and fun to share amongst friends and family.
